Halloumi Marinated in Yellow Mash
Our zingy and citrussy yellow mash makes the most mouth-watering marinade for all things summery… combine with olive oil and fresh garlic for drop dead deliciousness (this combo is also great as a salad dressing). Here I have used it to marinade one of my all time favourite foods… Halloumi Kebabs. Feel free to add any of your preferred summer veggies onto the skewers too! I recommend you serve in fresh pitta breads with a crunchy Greek salad, or just on skewers as an appetizing BBQ addition.
Makes 4 Skewers, marinades in an hour and grills in 5 minutes
Ingredients
- 250g Halloumi Cheese
- 3 tbsp HATARI Yellow Mash
- 3 Garlic Cloves - grated or crushed
- 1 tbsp Olive Oil
- A few grinds of black pepper
- 4 Wedges of lemon to serve
Methods
Step 1 – Cut the halloumi into 1inch chunks and place in a bowl. (If you are using other vegetables as well, cut into similar size pieces and place in the bowl with the halloumi.)
Step 2 – In a separate bowl, mix the remaining ingredients until well combined and drizzle over halloumi chunks. Toss well so that halloumi is evenly coated in marinade.
Step 3 – Cover bowl and leave in the fridge for an hour - or longer if you have the time to marinade.
Step 4 – Split the halloumi chunks into 2 even portions and skewer onto 4 pre-soaked skewers. Heat a griddle pan to a high heat and place skewers onto pan. Cook on each side for about 4 minutes or until the halloumi softens and begins to brown.
Step 5 – Alternatively - pop the skewers on a preheated BBQ and cook on both sides until halloumi begins to turn golden brown.
Step 6 – Serve with fresh warmed pitta breads, Greek salad, and a big dollop of garlic mayonnaise mixed with HATARI yellow mash.
